GREEN CHUTNEY RECIPE: HARI CHUTNEY RECIPE

Ingredients for Green Chutney Recipe-

  • Coriander Leaves- 1 cup, finely chopped
  • Cumin Seeds- 1/2 teaspoon
  • Groundnuts- 1 teaspoon
  • Sesame Seeds/til- 1/2 teaspoon
  • Shredded fresh Coconut- 2 teaspoons
  • Garlic Cloves- 3
  • Green Chilli- 1, seeded and chopped
  • Ginger0 1/4 inch, roughly chopped
  • Sugar- 1 teaspoon
  • Lemon Juice- 1 teaspoon
  • Salt
  • Water- 1 1/2 tablespoon

Method: Green Chutney Recipe-

  1. Add groundnuts, cumin seeds, coconut and sesame seeds in a small chutney jar of mixer grinder.
  2. Grind them in a grinder until smooth powdery paste.
  3. Add garlic, coriander leaves, 1 1/2 tablespoons water, green chilli, sugar, ginger, lemon juice, salt.
  4. Grind again and make a smooth paste.Taste for salt and lemon juice.Add more if required and mix well.
  5. Transfer green chutney to serving bowl.

Garlic Chutney Recipe

Ingredients for Dry Garlic Chutney-

  • Garlic Cloves- 8
  • Dry Coconut- 1/2 cup grated
  • Sesame Seeds- 1 tablespoon
  • Roasted Peanuts- 1 tablespoon
  • Red Chilli Powder- 2 teaspoons
  • Coriander Powder- 1 teaspoon
  • Tamarind Paste- 1/2 teaspoon
  • Oil- 1 teaspoon
  • Salt

Method: Dry Garlic Chutney-

  1. Heat 1 teaspoon oil in pan and roast garlic cloves over low flame for 1 minute.Turn off flame and transfer it to a plate.
  2. Dry roast grated coconut in same pan on low flame until light brown.Turn off flame and transfer it to a plate.
  3. Dry roast sesame seeds over low flame until seeds start to pop and transfer to plate.
  4. Let roasted coconut, sesame seeds and roasted garlic cool for 5 minutes.Add tamarind paste, roasted peanuts, salt, red chilli powder and coriander leaves in grinder jar.
  5. Grind them until medium coarse powder.
  6. Dry Garlic Chutney is ready.We can store it for up to 15 days in refrigerator.Use it as a spread for preparing Pav Vada.
