    CHOLE BHATURE RECIPE IN ENGLISH

    Chole Bhature

    Ingredients For Chole Bhature Recipe-

    For Bhature-


    • All Purpose Flour/Maida- 2 cup
    • Curd- 1/2 cup
    • Salt- 1/4 Teaspoon
    • Baking Soda or Baking Powder- 3 pinch
    • Semolina/Sooji- 1 Teaspoon
    • Dry Yeast- 1/4 Teaspoon
    • Sugar- 2 pinch
    • Soda Water/Water- 1 cup
    • Oil- 2 tablespoons + for Frying

    For Chole Masala-

    • White Chickpeas/Kabuli Chana- 1/2 cup
    • Tea Bag or Tea Leaves- 1 teaspoon (1-2 tea bags)
    • Red Ripe Tomatoes- 2, chopped
    • Onion- 1, finely chopped
    • Ginger-Garlic Paste- 1 1/2 teaspoons
    • Green Chili- 1-2, finely chopped
    • Red Chili Powder- 1/2 teaspoon
    • Turmeric Powder- 1/4 teaspoon
    • Cooking Oil- 3 tablespoons
    • Salt to Taste
    • Coriander Leaves- 2 tablespoons, finely chopped

    For Dry Masala-

    • Bay Leaf- 1 small piece
    • Black Cardamom- 1
    • Coriander Seeds- 1 tablespoon
    • Cumin Seeds- 1 teaspoon
    • Black Peppercorns- 4-5 
    • Dry Red Chili- 1
    • Cloves/Laung- 2
    • Cinnamon- 1-inch piece

    Method-

    Making the Bhatura dough-

    1. Take Semolina Sooji, All-purpose-flour Maida, add Curd Dahi, Baking powder or baking soda, Salt, Dry Yeast.
    2. We normally use the 2-3 pinch of Sugar in Bhatura dough along with plain Soda Or you can use Sprite as a substitute for these two ingredients.
    3. Mix all ingredients. Add Soda water gradually in limited quantity and knead to make a smooth dough.
    4. Use the soda water only as much as it is required to knead the soft and smooth dough, don't add the full can.
    5. Add Oil to the dough and knead 1-2 minutes for final touches. The dough should be soft and smooth. It would take about 10 minutes to knead this dough.
    6. Take a small portion of dough and give it a shape of the ball.Take this ball, press it and roll out in a circular shape like puri of round 5-6 inch diameter.
    7. Keep it little thick than regular puri.If required, grease ball with oil or coat it with dry flour to prevent it from sticking on a rolling board.Repeat the process.

    Frying the Bhatura

    1. Heat oil in a deep frying pan/kadahi over medium flame to fry Bhature.
    2. To check whether oil is hot enough for deep frying or not, drop a small piece of dough in it and if it comes to the surface immediately without changing its color, then oil is sufficiently hot.
    3. Now Place 1 rolled out raw bhatura in hot oil.After 7 seconds, gently press it in the center with a perforated spoon to puff up.
    4. When bottom side is light golden brown, turn it gently and deep-fry another side until light golden brown.
    5. Make sure that you are deep frying on medium heat.When ready, take bhatura out from oil with the help of perforated spoon and drain excess oil
    6. Transfer it to plate.Fry remaining bhaturas in the same way.Eat and enjoy these Bhature with Punjabi Chole.

    Method: Chana Masala-

    1. Soak white chickpeas/Kabuli Chana in water for 8-10 hours or overnight.
    2. Tie 1 tsp tea leaves in a plain muslin cloth or use the tea bag.
    3. Pressure cook soaked white chickpeas with enough water, a tied tea leaves pouch and salt in a 3-liter capacity pressure cooker over medium flame.After 4-5 whistles, turn off the flame and let the pressure comes down naturally.Don't open the perfectly.
    4. Open the lid and remove tied tea leaves pouch/tea bag.Drain the excess water from boiled chickpeas in a large bowl.Keep the drained water to use later in the recipe.
    5. Dry roast black cardamom, bay leaf, cumin seeds, coriander seeds, dry red chili, black peppercorns, cinnamon and cloves in kadahi/pan for 1 minute or until nice aroma starts over the low flame.Let them cool for a while and then grind them in a small jar of a mixer grinder to make smooth dry punjabi masala powder.
    6. Mash 2 tablespoons boiled chickpeas grind in a grinder to make a medium coarse paste or with the backside of a large spoon.Grind tomatoes in a mixer grinder to make tomato puree.
    7. Heat 3 tablespoons oil in a pan over medium flame.Add chopped onion and saute for 1-2 minutes until it turns light brown.Add chopped green chili and ginger-garlic paste.Mix well and cook for 30 seconds.
    8. Add tomato puree and salt (only for tomato puree because we have already added salt while boiling white chickpeas).Cook 4-5 minutes or until oil starts to separate on medium flame.Stir it in between occasionally to prevent sticking.
    9. Add red chili powder, dry masala powder and turmeric powder, mix well and saute for a minute.
    10. Add mashed chickpeas, 1 cup water (preserved drained water of boiled chickpeas) and boiled chickpeas, mix well.Cook for 4-5 minutes or until gravy becomes thick.Turn off the flame.Transfer white chana masala curry to a serving bowl and garnish with onion and chopped coriander.Serve it hot with Bhaturas.

    छोले भटूरे (Chole Bhature Recipe in Hindi)पंजाब की सबसे पसंदीदा डिश है.यह पंजाब की सबसे ज्यादा फेमस डिशेज़ में से एक है.इसका लाजवाब और चटपटा सा स्वाद सबको बहुत भाता है.अगर आप छोले भटूरे (Chole Bhature Recipe in Hindi) घर पर बनाना सीखना चाहते है, तो आप बिलकुल सही जगह पर है.

    आज हम आपको स्वादिस्ट चना मसाला और भटूरे की बहुत ही आसान और टेस्टी विधि बताएंगे.तो आइये बनाते छोले भटूरे (Chole Bhature Recipe in Hindi)।

    आवश्यक सामग्री (Ingredients For Chole Bhature)-

    भटूरो के लिए- 

    • मैदा- 3 कप 
    • खट्टा दही- 1/2 कप 
    • सूजी- 1 टीस्पून 
    • बेकिंग पाउडर- 3 ग्राम 
    • नमक- 1/4 टीस्पून 
    • सूखी यीस्ट- 1/4 टीस्पून (Optional)
    • सोडा वाटर- 1/2 कप या पानी 
    • चीनी- 2 चुटकी 
    • तेल- 2 टीस्पून + तलने के लिए 

    चना/छोले मसाला के लिए- 

    • सफ़ेद चना/काबुली चना- 1/2 कप 
    • टी बैग- 2 या चाय पट्टी को कपडे में बाँध कर उपयोग करे 
    • टमाटर- 2 
    • प्याज- 1, बारीक कटा हुआ 
    • अदरक-लहसुन का पेस्ट- 1 1/2 टीस्पून 
    • हरी मिर्च- 1-2, बारीक कटी हुई 
    • लाल मिर्च पाउडर- 1/2 टीस्पून 
    • हल्दी पाउडर- 1/4 टीस्पून 
    • खाना पकाने का तेल- 3 टेबलस्पून 
    • हरा धनिया- 2 टेबलस्पून, बारीक कटा हुआ 
    • नमक- स्वादानुसार 

    सूखे मसाला पाउडर चना मसाला के लिए- 

    • तेज पत्ता- 1 छोटा टुकड़ा 
    • बड़ी काली इलायची- 1 
    • सूखे धनिये के बीज- 1 टीस्पून 
    • जीरा- 1 टीस्पून 
    • काली मिर्च- 4-5 
    • सूखी लाल मिर्च- 1 
    • लौंग- 2 
    • दालचीनी- 1 इंच लम्बा टुकड़ा 

    छोले भटूरे बनाने की विधि-

    भटूरे बनाने के लिए- 

    1. सबसे पहले एक छोटा कटोरा लीजिये उसमे 3 टीस्पून हल्का गुनगुना पानी, यीस्ट डालकर अच्छे से मिलाइये.(अगर आप यीस्ट नहीं ले रहे तो इस स्टेप को छोड़ दे). 
    2. अब एक दूसरा छोटा कटोरा ले कर उसमे सूजी, मैदा, बेकिंग पाउडर, दही और नमक डालिये.इसमें घुली हुई यीस्ट डालकर हाथ से अच्छे से मिलाइये. 
    3. अब तेल डालकर अच्छे से मिलाइये. 
    4. अब थोड़ा-थोड़ा सोडा वाटर या पानी और चीनी डालकर हाथ से अच्छे से मिलकर आटा गूंथिये.नरम आटा गूंथने में 5-6 मिनट लग जायेगे. 
    5. आटा गूंथने के बाद आटे को 1-2 घंटे सूती कपड़े से ढककर रख दीजिये, ताकि खमीर उठ जाए.(अगर आपने यीस्ट और सोडा वाटर का उपयोग नहीं किया तो आटा को 2 घंटे ढककर रखिये). 
    6. 1-2 घंटे बाद आटा फूलकर दोगुना हो जाएगा. आटा तैयार है. 
    7. अब एक कड़ाही में तलने के लिए तेल डालकर तेज आंच पर गरम करिये.3-4 मिनट में तेल गरम हो जाएगा. 
    8. तेल गरम होने तक आप भठूरे बेल कर तैयार करिये, इसके लिए आटे से 3 इंच का गोला निकालिये, इसे हाथो से गोल-गोल घुमाकर गोला/पेड़ा बनाइये. 
    9. अब इस गोले का लगभग 10% हिस्सा तेल में छुआकर बेलन से गोल आकार में बेल बड़ा कर लीजिये (इसमें आपको थोड़ी कठिनाई आ सकती है, क्योकि मैदा बार-बार छोटा होता जाता है पर आप बेलते रहिये बड़ा हो जाएगा). 
    10. अब इसे गरम तेल में डालकर तब तक तलिये जब तक की यह दोनों तरफ से हल्के भूरे रंग का न हो जाए (भटूरे को अच्छे से फुलाने के लिए कलछी से हल्का-हल्का दबाते हुए फुलाइये).
    11. दोनों तरफ से हल्के भूरे रंग के होने तक तल कर प्लेट में निकाल लीजिये.इसी तरह से सारे भटूरे तल कर तैयार कर लीजिये. 

    छोले/चना मसाला बनाने की विधि- 

    1. सफ़ेद चना को रात भर या 8-10 घंटे पानी में भिगो कर रखिये. 
    2. अब एक टीस्पून चाय पत्ती को एक सादे मलमल के कपड़े में बाँध दें, या टी बैग का उपयोग करिये. 
    3. चना को नमक, टी बैग, और पानी के साथ मध्यम आंच पर 2-3 लीटर कैपेसिटी वाले प्रेशर कुकर में 4-5 सीटिया बजने तक पकाइये. 
    4. 4-5 सीटिया बजने के बाद बंधी हुई चाय पत्तियों/टी बैग को निकाल लीजिये और उबले हुए चने में अतरिक्त पानी को एक कटोरी में छान कर साइड में रख लीजिये, इसे बाद में यूज़ करेंगे.
    5. बड़ी इलायची, तेज पत्ता, जीरा, सूखे धनिये के बीज, सूखी लाल मिर्च, काली मिर्च, दालचीनी और लौंग कम आंच पर 1 मिनट के लिए भूनिये.सूखा पंजाबी मसाला पाउडर बनाने के लिए भुने हुए मसालों को मिक्सी में बारीक पीस ले. 
    6. 2 टेबलस्पून उबाले हुए चनो को एक कटोरी में लेकर चम्मच से दबाकर पीस लीजिये या मिक्सी में दरदरा होने तक पीस लीजिये। 2 टमाटर को मिक्सी में डालकर प्यूरी बना लीजिये.   
    7. एक कड़ाही में मध्यम आंच पर तेल गरम करिये। गरम तेल में प्याज डालकर 1-2 मिनट हल्के भूरे रंग का होने तक भून लीजिये.कटी हुई हरी मिर्च और अदरक-लहसुन का पेस्ट 30 सेकंड के लिए भूनिये. 
    8. अब टमाटर की प्यूरी और टमाटर की प्यूरी के लिए नमक डालिये, 4-5 मिनट या तब तक भूनिये जब तक की तेल अलग न होने लगे.सूखा मसाला पाउडर, हल्दी पाउडर और लाल मिर्च पाउडर डालिये, अच्छी तरह से मिलाकर 1 मिनट के लिए पकाइये. 
    9. अब तैयार चना पेस्ट, उबले हुए चने और उबले हुए चनो में से छाना हुआ 1 कप पानी डालकर अच्छे से मिला लीजिये।
    10. ग्रेवी को लगभग 4-5 मिनट तक या गाढ़ा होने तक पकने दीजिये। गैस बंद कर दीजिये, चना मसाला  तैयार है.एक कटोरी में निकाल कर प्याज से और धनिये से सजाकर परोसिये.
