Makki ki Roti Sarso Ka Saag

Makki ke mote aate se bani makki ki garma-garam roti, sarso ke patto aur thode se palak, bathua methi vagereh ke patto ko baarik kaat kar bna saag, makhan aur gud ke sath sardi ke dino me khane ka kuch alag hi mja hai.

Ingredients for Makki ki Roti - Avshyak Samgri

  • Sarso ka saag-400gram
  • Palak-100gram
  • Bathua -100gram
  • Tamatar-3(250gram)
  • Hari mirch- 4
  • Adrak ka paste-1 inch tukda ka
  • Sarso ka tel-2-3 tablesapoon
  • Haraa dhaniya-2 tablesapoon(baarik kataa hua)
  • Makki ka Aata-2-3 tablesapoon
  • Jeera-1/2 choti chamach
  • Hing-1 pinch
  • Haldi powder-1/4 choti chamach
  • Dhaniya powder-1 choti chamach
  • Lal mirch powder-1/4 choti chamach
  • Namak-1 choti chamach se kam ya svadanusaar

How to Make Makki ki Roti Sarso ka Saag - Vidhi

Sabse pehale sarso ke saag ko saaf kijiye, dandiyo ko hataa kar patto ko tod kar alag kar le.

Patto ko saaf pani se dho kar atrikt paani nikal dijiye aur baarik kaat kar tyaar kar lijiye .

Ab palak ko saaf kijiye, moti dandiyo ko hataa kar, mulayam patto ko tod kar saaf paani se dho lijiye, atrikt paani nikaal kar baarik kaat lijiye.

Bathua ke patto ko bhi saaf karke, dho kar, sukha kar baarik kaat lijiye.

Tamatar, hari mirch, adrak ko bhi ashe se dho kar mixer jaar me dalkar paste bna lijiye.

Cooker lijiye, isme sarso, palak aur bathua ke patte dalkar, 1/2 cup pani dalkar cooker band kar dijiye aur 1 sity aane tak pka lijiye.

Cooker me sity aane par gas band kar dijiye aur cooker ka pressure khatam hone dijiye.

Kadhayi me 2 tablesapoon tel dalkar garam kijiye, tel garam hone par isme jeera dal dijiye, jeera bhunane par hing, haldi powder aur dhaniya powder daal kar thoda sa bhun lijiye.

Ab isme makki ka aata dalkar lgatar chalate hue halka sa bhun lijiye, ab iss masale me tamatar, hari mirch aur adrak ka paste dalkar mila dijiye aur masale ko tab tak bhune jab tak ki masale me se tel na alag hone lage.

Cooker khol kar sabjiyo ko chamache se dabate hue ashi tarah mesh kar lijiye.

Masala bhun jane par isme sabjiya daal dijiye, ab isme lal mirch powder aur namak daal kar mila dijiye.

Ab 1 cup pani aur haraa dhaniya daal kar sabjiyo ko 10-12 minute tak dhimi aag par ashe se pakne dijiye.

Sabji ko bich-bich me har 1-2 minute baad chalate jarur rahiye.Saag bankar tyaar hai.

Makki ki Roti-Vidhi

Makke ka aata bartan me nikaal lijiye, isme thoda-thoda pani daalte hue sakht aata lgakar tyaar kar lijiye.

Ab aate se thoda aata nikaal kar 2-3 minute ashe se masalte hue naram kijiye.

Tave ko gas par rakh kar garam kare, thoda sa aata lijiye aur isse hatho se gol karte hue chapta kijiye.

Ab hatho par pani lgakar loi ko badhaye aur chapati ka aakar dete hue isse tave par daaliye.

Roti ka rang upar se thoda sa gehra hone par, roti ko dusari taraf palat dijiye, isko niche ki taraf sunehari(brown) chitti aane tak sek lijiye.

Ab roti ko chimte se uthakar sidha gas ke chulhe par seke.

Roti ko dono aur se brown chitti aane tak sek lijiye.

Roti ashe se sik jaane par plate me rakh le, desi ghi lgakar parosiye.

Issi tarah se baki roti bhi bna kar tyaar kar lijiye.

Roti ko aap polythin par bdha kar bhi tyaar kar sakte hai.

Iske liye polythin par thoda sa ghi lgakar chikna kijiye aur iss par loi rakh dijiye, ab polythin se loi ko dhak dijiye aur hath se dabate hue loi ko chapta karte hue badhaye ya belan ki madad se halke hatho se isse bel lijiye.

Ab roti ko polythin se aaram se utarte hue tave par daal dijiye.Roti ko dono aur se sek, ghi lgakar parosiye.

Makke ki Roti Sarso ka Saag bankar tyaar hai.

Saag ke upar thoda sa ghi aur haraa dhaniya daal kar garma-garam parosiye aur khaiye.

  • Agar aap lehsun aur pyaj pasand karte hai to jeera bhunane ke baad, 1 baarik kata pyaj aur 5-6 lehsun ki kali chilkar kut kar daale aur halka gulabi hone tak bhune, baaki saari chije ussi parkar dalkar saag bna le.Makke ki roti thodi moti hone tak hi badhaye.
