Rabri Recipe: How to Make Rabri

Rabri Recipe: Rabri or Rabadi is a North Indian delicacy.It is served as a dessert.You will rarely find someone who does not like creamy shahi rabri having a nice aromatic flavor of saffron and cardamom (ilaychi).Rabri is one of the rich sweet recipe prepared of any festival or religious fasting.So let's make Rabri Recipe.


Rabri Recipe

Ingredients for Rabri Recipe-

  • Milk (full fat)- 1 1/2 liters
  • Sugar- 2 1/2 tablespoons
  • Green Cardamom Powder- 1/2 teaspoon
  • Almonds- 10 sliced
  • Saffron- 5-7 strands
  • Pistachio- 10 sliced

How to Make Rabri- Method

Bring the milk to boil in a deep, heavy based, pan over medium flame.

When milk starts to boil, reduce flame to low.Stir at regular intervals of 3-4 minutes but not continuously.

Move the layer of foaming from boiling milk towards the rim, do the same process for next cream layer.

Cook until milk is reduced to 1/3 of the original quantity.

Add Sugar and stir to dissolve it.Add cardamom powder, Sliced Almonds, Saffron strands and sliced pistacho and mix well.

Cook for 2 minutes and turn off the heat, remove the cream from the rim and fold it into milk.

Refrigerate it for at least 2 hours before serving.

Rabri Recipe is ready, transfer prepared sweet kesar rabri in serving bowl and garnish with almonds and Kesar.Serve chilled.
