Amritsari aloo kulcha,aloo ki pithi bnakar,bharkar bnaya jata hai.Aloo bhare amritsari kulche bnane ke liye bhi aata samanya kulche bnane ke liye tyaar kiye gaye aate ke tarike se hi lgaya jaata hai.
Ingredients (Avshyak Samgri)
- Kulche ke liye-
- Maida-3 cup(400gram)
- Dahi-3 tablesapoon
- Baking soda-3/4 choti chamach
- Chini -1 choti chamach
- Tel-1 tablesapoon
- Namak-3/4 choti chamach ya swadanusaar
- Jeera ya Ajvayin-1 choti chamach
Aloo ki Pithi ke Liye-
- Aloo-300gram(4 aloo uble hue)
- Namak-svadanusaar ya 1/2 choti chamach
- Hari mirch- 3-4 (baarik kati hui)
- Adrak-1inch lmba tukda(kaddukas kiya hua)
- Amchur powder-1/2 chota chamach
- Dhaniya powder-1 choti chamach
- Lal mirch powder-2 Pinch
- Garam masala-1/2 choti chamach ya 1/4 choti chamach
- Haraa dhaniya -1 tablesapoon(baarik katra hua)
How to Make Amritsari Aloo kulcha -Vidhi
Kulche ke liye aata lgaiye-
Maida ko kisi thali ya donge me chaan kar nikaal lijiye,bich me hath se jagah bnaiye,iss jagah me dahi,baking soda,namak,chini,tel dalkar saari chijo ko maida me ashe se mila lijiye.Gungune pani ki shayta se naram chapati ke hi jaisa aata guthiye(aata guthte samay pani thoda-thoda dalkar milaiye).Aate ko ashi tarah se masal kar bar-bar utha-utha kar ,palat kar 5 minute tak guthiye,aate ko ekdam chikna kar lijiye.
Guthe aate ko hath se charo aur tel lgaiye aur kisi gehare pyale me rakhiye.Pyale ko mote toliye se dhak kar garam sthan par rakh dijiye(guthe aata 3-4 ghante me fulkar lagbhag do guna ho jata hai).Fule hue aate ko fir se hath se dba kar ,punch karke ,palat kar ek jaisa kar lijiye.Kulche bnane ke liye aata tyaar hai.
Pithi Tyaar Hai-
Aloo ko chilkar baarik tod lijiye,namak,adrak,hari mirch,dhaniya powder,amchur powder,lal mirch powder,garam masala aur haraa dhaniya daaliye.Saari chijo ko ashi tarah se mila dijiye,aloo ki pithi kulche bnane ke liye tyaar hai.
Kulche Bnaiye-
Guthe gaye aate se 8-10 loiya bnakar tyar kar lijiye,aloo ki pithi se bhi itne hi gole bnakar tyaar kar lijiye.
Aate ki 1 loi uthaiye ,sukha maida lgakar 3 inch vyaas me beliye,iss par 1 aloo ki pithi ka gola rakhiye,aloo ke gole ko hath se dbakar chapta kijiye aur bele gaye kulche ko charo aur se utha kar aloo ko band kar dijiye.
Aloo ko band karke bani loi ko sukhe maide me lapetiye,dono hatho ki hatheliyo se dba kar thoda 3 inch vyaas me 1 jaisi motai me bdha lijiye,Ab isse thoda sa sukha maida lga kar ,chakle par rakhiye,Belan ki shayta se 6-7 inch vyaas me halka sa dabaav dete hue beliye.Bele gye kulche ke upar thodi si jeera ya ajvayin dalkar dbakar chipka dijiye.
Aloo Bhare Kulche ko Oven,Tandur ya Tave par,Jis par Bnana chahte Hai,Bna Sakte Hai-
Tave par kulche bnane ke liye ,Tva aag par rakh kar garam kijiye.Tel lgakar tave ko chikna kar lijiye.Chakle se kulcha uthaiye aur jeera ki satah upar karte hue tave par daaliye.Upar ki satah thodi gehari hone ke baad kulcha palatiye,nichali satah par halki brown chitti aane par ,upari satah par thoda ghi ya tel lgaiye aur palatiye,dusari satah par bhi ghi ya tel lga dijiye,kulche ko dono aur brown chitti aane tak sek lijiye.Saare kulche issi tarah bnane hai.
Aloo bhare kulche garma-garam dahi,chatni ya chole aur achar ke sath prosiye aur khaiye.
Kulche ko Oven me Bnane ke Liye-
Upar btaye gaye tarike se kulcha bel kar tyaar kijiye.Tray me tel lga kar chikna kijiye,bela gya kulcha tray me daaliye(tray lambi ho tab 2 kulche 1 sath seke ja sakte hai),jeera ki satah ko upar karte hue kulcha tray me rakhiye.Oven ko pehale se 300 c par garam kijiye.Kulche ki tray oven me rakhiye,2 minute me kulcha ful jata hai,kulcha palatiye aur dusari aur halki brown chitti aane tak sek lijiye.Sike kulche ko nikaal kar kisi plate me kitchen nepkin papar bicha kar rakhiye.Saare kulche issi tarah bna kar tyaar kar lijiye.
